This artisanal cheese factory specializes in making gourmet cheeses with a washed rind from organic untreated cow's milk and from organic untreated cow and goat's milk. The milk from our herd of magnificent Brown Swiss is transported by an overhead 45 m milk line to a basin where it is then processed. The white blocks are transferred to a room where they are left to ripen for at least two months and then sold in our store alongside a range of other products, including organic meat.
